東京都出身。千葉大学、千葉大学大学院修了後、千葉大学助手、助教授(2003)(園芸学部)を経て、教授(2008より)。その間、米国NIHに留学(1998-1999)。専門は食品化学、食品機能学、分子栄養学、栄養生化学。食べ物に含まれる様々な成分の生理機能、情報伝達機構に興味を持っている。研究テーマは食品成分によるトリプトファン代謝の分子レベルでの変動機構。未利用資源を活用した食物繊維素材の開発とそのコレステロール代謝、脂質代謝改善作用および抗炎症作用に関する研究。DNAチップを用いた食の機能性評価法に関する研究。野菜、穀類の機能成分(フィトケミカル)に関する研究(プロジェクト研究)。所属学会は日本アミノ酸学会(評議員)、日本食物繊維学会(理事)、日本農芸化学会(代議員)、日本栄養・食糧学会(代議員)、日本トリプトファン研究会(幹事)、日本食品化学学会、日本ビタミン学会等。J.Nutr.Sci.Vitaminol.編集委員、日本食物繊維学会編集委員、日本栄養・食糧学会編集委員など務める。受賞:日本食品化学学会奨励賞、日本食物繊維学会学会賞、他。
